As soon as there's a chill in the air in the Windy City, the
spirit starts to crave comfort food to compensate for the longing
left when summer ends. Executive chef John Hogan's chicken popie
fills the void. It is a far cry from the wisely forgotten frozen
versions with neon-colored vegetables and a pale, tasteless sauce.
Hogan's puff pastry is filled with braised chicken, earthy mushrooms,
a hint of thyme and a bit of Madeira wine to warm the heart and
soul.
